Green Egg “Cakes” – An Easy Way to Add Extra Greens

Leafy greens like spinach and kale are packed with vitamins, minerals, and fibre, yet they’re not always the easiest to enjoy. This recipe is a simple, playful way to incorporate more greens into your diet—or your family’s—without any mealtime battles.

Microwave-friendly and quick to prepare, these Green Egg “Cakes” are perfect for breakfast, brunch, or a light dinner. They can also be adapted to suit adult tastes, making them a versatile addition to any meal rotation.

Serves: 2

Equipment:

  • 2 small ramekin dishes (or large mugs)
  • Blender
  • Microwave

Ingredients:

  • ½ cup frozen spinach, loosely packed
  • ½ cup frozen peas
  • ½ cup grated cheese
  • 4 eggs
  • Salt and pepper, to taste
  • Olive oil for greasing

Instructions:

  1. Microwave or steam the frozen vegetables until just heated through, about 30 seconds to 1 minute.

  2. Combine the cooked vegetables, eggs, and grated cheese in a blender. Blend until smooth, ensuring no large spinach bits remain (about 1 minute on medium-high speed).

  3. Grease the ramekin dishes lightly with olive oil. Divide the mixture evenly between the dishes and optionally sprinkle extra grated cheese on top.

  4. Microwave on medium-high for 1–2 minutes, until the egg mixture is fully set. Cooking time may vary depending on your microwave, dish size, and egg size—adjust as needed.

  5. Turn out the Green Egg Cakes and serve. They pair beautifully with peas, smoked salmon, avocado, or any toppings of your choice.

Optional Enhancements:

  • Add ¼ tsp sumac, onion powder, or garlic powder

  • Fold in fresh herbs like chives, parsley, or basil

  • Add a touch of mustard to the egg mixture

  • Mix in chopped olives, sun-dried tomatoes, or feta

  • Top with capers, tuna, kimchi, or sliced chicken

  • Sprinkle with nutritional yeast or a dash of goat cheese

  • Add fresh chilli or smoked salmon for a flavour boost
