Ingredients:
- ½ cup frozen spinach, loosely packed
- ½ cup frozen peas
- ½ cup grated cheese

Instructions:
-
Microwave or steam the frozen vegetables until just heated through, about 30 seconds to 1 minute.

Microwave on medium-high for 1–2 minutes, until the egg mixture is fully set. Cooking time may vary depending on your microwave, dish size, and egg size—adjust as needed.
-
Turn out the Green Egg Cakes and serve. They pair beautifully with peas, smoked salmon, avocado, or any toppings of your choice.
